Is there a way that I can change the email that receives the error notifications apart from the email that was used to sign up on the account in a Professional Plan?

You could set up a Zap that uses Zapier Manager to send error notification emails to a different email address (or multiple email addresses). We have a guide on how to set up that kind of Zap here:
It can be set to trigger on errors for specific Zaps, Zaps within a certain folder or just all Zaps on the account.
