That is unusual.
The Outreach Zap app integration does not have an available action to “Find Prospect”, otherwise I would suggest adding that as a Zap step since that can often return the full data for a record.
Try reaching out to Outreach Support for help with their Zap app integration.

I can see our Support team have added you to a bug where the Updated Prospect trigger is not returning all the fields, only those that were updated—sorry you’re running into that issue. As they mentioned, we can’t provide an ETA on when you can expect that to be resolved by but we’ll definitely let you know as soon as it is.
There aren’t any workarounds noted at the moment but I’ll be sure to follow up here if I come across any. If there’s anything else we can help with in the meantime please do let us know.

An update was made for Outreach to send the the full payload of Prospect attributes here - please try turning your Zaps off and back to reset the webhook subscription, and you should begin to receive all the available attributes when those Zaps trigger.
