Is it possible to create a Zap that utilises an existing template in my gmail account. So not adding the body of the email in the Zap creation but pointing the Zap to my existing templates.

Sorry, using a Gmail saved template is not currently possible with Gmail’s Zap app integration.
The email template would have to be recreated in the Zap action: Gmail - Send Email
But you can include a saved Signature.
