Is it possible to update a specific contact text field after a specific campaign is sent?
So for example:
when campaign X is sent or completed all contacts who received the email field name {sequence} updated to 2
If this is not possible, what about this other Zap
When I run the Zap, update all contacts in list Y who have {sequence=empty} to 2

This is a tricky one because although you can trigger a Zap when a campaign is sent in Sendinblue, that trigger doesn’t give you the full list of contacts that the campaign was sent to, so the Zap wouldn’t know which contacts to update.
The second option that you’ve described is possible if you can export all of those contacts to a Google Sheet. You could export all of the contacts in list Y to a sheet, and then use Transfer by Zapier to update all of the contacts in one go.
Transfer allows you to perform actions on data in bulk, in this case updating a list of contact in SendinBlue based on the information in a Google Sheets. When you start to set up the transfer, that will look like this:
