I am new to using Zapier. I was curious if anyone is familiar with taking a document from a monday board/task and it being sent to a dropbox folder with a zap.

Just stopping by here to share that the feature request Christina mentioned has been closed as there’s another step named Get File Column Values which would allow you to get the file from the item:

Hi friends! I wanted to pop in and consolidate some of the answers in this thread into one.
The triggers in Zapier do not return the files you upload (just tested). So you will have to look into the Monday API

OOP. After double checking turns out allowing files to be accessible on New Item on Board or Column Value Changed triggers is an active feature request.
