I find that Ecwid triggers only happen when a NEW orders are made. How do I setup a trigger when an existing order changes the Payment Status from AWAITING_PAYMENT to PAID.

If you want to zapier to get triggered for every single updates to your order, you will need to set up Ecwid webhook and configure it using “Webhook by Zapier” trigger.
