Can’t turn on zap after creating my first zap , it keeps showing this error message: Error turning Zap on: This data flow to is not allowed `GoogleMailV2API`

Good question.

You need a paid Gmail account to use Gmail with any app.

Only certain approved apps can be used with a free Gmail account.
