If the issue happens inconsistently, it could have to do with the format of the birthday logged-in Typeform. Because there are a few different ways of displaying a date, it would be helpful to specify the output format you want by adding a Formatter step. By doing that, the result in the Pipedrive will be consistent, without the system getting confused.
If the date format in Typeform is dd/mm/yyyy (as seen in one of the screenshots), use that as the input date format. More information is found here:

That said, the result being one day off is odd. The first thing that comes to my mind is that there is a timezone different at play here.
Does your Typeform or Pipedrive step pull timezone data anywhere in the steps? Please review your Zap’s configuration in case any of the fields require a timezone.
After that, you can ensure both apps are using the same timezone so that there is no discrepancy.

Another thing to check is to make sure your systems are set to the same Time Zone. (I ran into this a lot when my Zapier account was set to Pacific US time and the system I was writing to was based in Europe. (You can check your Zapier designated time zone by looking at your profile/account settings.)
Running the input and output date through formatter is a great idea no matter what. It ensures that the date format outputted is consistent regardless of how it gets entered, and you can set the Time Zone manually in there as well. (And it’s “free” - Zapier doesn’t use a task for Formatter steps.) Here’s a bit of focused documentation for Formatter. Good luck and let us know how it goes!
