You mentioned trying this:
Extract Email Address (for Instantly's "Lead's Email" field) from this property - Lead's Email:your_lead_email doptional] but that isn’t working either?
When you tried mapping those fields, did either of them contain an email address, or did both say “No Data”?
If there wasn’t an email address showing, it could be that the selected test record didn’t include one. Could you try selecting a different test record to see if that then passes over an email address?
If that doesn’t help, could you share some screenshots of the HubSpot action as well as the fields being output from the Instantly trigger? Since we can’t access your Zaps, screenshots help us understand the setup better so that we can better determine what might be causing the trouble here. Just make sure to blur or remove any personal info (names, emails, etc.) before sharing—you can use a tool Zappy for that.

I believe the issue is the email address copying over from instantly but there’s no other property or way to edit?
The only property I can select for an ‘email’ to map from instantly is {your__lead_email (optional)}
