I have my YT to WP setup and everything is working apart from the featured image.
The Zap is pulling the image from YT but it won’t upload it as a featured image, its just uploading it to the media library. Any ideas on how to fix this?

There are a couple of ways to do this:
Option 1
Trigger: YouTube — New Video
Action: WordPress — Upload Media
Action: WordPress — Create Post (then select the media from step 2 as your featured image)
Option 2
Trigger: YouTube — New Video
Action: WordPress — Create Post
Action: WordPress — Upload Media (then select the post from step 2 to attach your media to)
