It seems the events available for Zoho CRM are very basic. I want to trigger a zap when the deal stage is changed to a specific value in Zoho CRM. Creating a custom field for this is not a viable workaround.
Is this even possible?

One option to explore would be to use Zoho CRM Workflow Rules:https://help.zoho.com/portal/en/kb/crm/automate-business-processes/workflow-management/articles/configuring-workflow-rules
You can fire a Zap webhook to trigger a Zap.
Zap trigger: Webhook - Catch Hook
That will generate a unique webhook URL to configure in Zoho.
