I have a zap set up to send an email when an event on Google calendar is 5 days away. I would like to repeat the email when the event is X days away as well. How do I set this up to happen in one zap with multiple tasks?

I would recommend you do to this via delay (see here). So after the zap you already have, you simply add a delay of X days and repeat the reminder mail action step again. Does that make sense for you?

I have the zap set up to send an email 5 days before the event. When I add a delay after the email, and set it for say 3 days, that is 3 days after the first email goes out, correct?

In the Zap that you currently have you can add a Delay For step for however many days you want between reminders. So if you want it 5 days before the even and 2 days before the event your Zap would be something like this:
Trigger: Google Calendar — Event Start
Action: The first reminder you want
Delay: Delay For 3 days
Action: The second reminder you want
