Need help parsing data from gmail for leads into Brivity

I’ve got the zap setup but where you say “use Zapier’s Formatter tool to extract lead details like name, email, and phone number from the email body” is where I’m getting stuck. 

I’m not getting how to do this. I see from the + section where i can select the Body Plain section, where the name exists, but how do i get it to identify the name, phone and email buried within the body text?
