When I create a new Zap and use Mautic as an action, when I try to retrieve new tags from it I only get 30-50 tags. New created tags are not loaded. And if I click on load new fields it says that there are no new fields to load. Any way I can retrieve them all?

From your description, at this time, it doesn’t appear so. When you are loading options, you are actually making a request to the Mautic server to pull that information for you. Depending on the API, this might not load all the results and would required what is called pagination to load more. If that wasn’t built in, you will always load the same results. However, that does not mean you can’t use more options.
Rather than load the options dynamically, you can switch to the custom tab and type in the tags you want.
