How can I integrate zapier in Shopify to get all gross sale and all data in one excel sheet

You can set the zap to trigger on every Shopify purchase, which will also include the gross order amount.
The second (and maybe even the last) step, is to add that value (and any other relevant data you want) to a new row in a cloud based spreadsheet (like Google Sheets or Excel).
On the other hand, if you wanted to continually update the same cell with the order amount without adding new rows to keep orders separate, you’d have to first get the spreadsheet to pull in the current cell value. Then use formatter to add the new order amount, then use an update sheet step to put the new value into the cell.
