Is there any documentation about the usage of Google Service Accounts?

There isn’t any documentation on our end at the minute that’s specific to using Google Service Accounts with BigQuery.

The feature request from the post you referenced was to add the ability to use Google Service Accounts with the BigQuery app on Zapier. And I can see there were two new fields added to the account connection pop-up which should allow you to add in your Google Service Account details when connecting:

If you’re getting stuck at all can you can share some details about what’s not working, any error messages you might be getting? Make sure to blur/remove any personal info (names, emails etc.) from screenshots before sharing using a tool like Zappy.
