Just playing with Zapier and I have it creating FB page posts but they say “Posted by Zapier - Pages" along with the post. How do I kill that? Is there a field I can send to replace that with the poster’s name?

In order to remove "Posted by Zapier-Pages" from your Facebook posts, go to your Facebook Page settings, navigate to "Page Roles," and ensure you're an admin. Also, in the General settings under "Posting Attribution," change the attribution to "Post as sYour Page]." Note that posts made by Zapier will always show as posted by the app, not a person, for privacy reasons. To have posts attributed to your or the Page's name, manually post or schedule them on Facebook.
