I am setting up a series of 8 emails triggers set up through Mailchimp for my donors.
In Zapier, do I have to add just the first trigger in the Mailchimp journey or does each of the triggers in the journey from Mailchimp need to be included?

That depends on how your Mailchimp Customer Journey automation is configured to fire.
We would need to see screenshots with how that is configured in Mailchimp to have more context.
If it triggers from a Tag, then when a Mailchimp Subscriber gets added with the Tag, it would trigger the Mailchimp Customer Journey to run.
