I have a WPform that has an address field, including one for US States. I'm sending the information on to Salesforce, The form has abbreviations for the states names, salesforce likes them spelled out. Is there a way in zapier to convert the the abbreviations to spelled out state names?

It's a little cumbersome to setup, but you'll want to use a "Formatter->Utilities->Lookup Table"
As I've exampled above, you'll want to use the "State" field from the form as the "Lookup Key" then add a line for each state.
