These are the available Asana Zap triggers: https://zapier.com/apps/asana/integrations#triggers-and-actions
There is no Asana Zap trigger that allows to only watching a specific custom field.

If the custom field is on a task then you could use the Updated Task in Project and, depending on your workflow requirements, you could check for that field in the task
