Hello, I am new and have never used Zapier.
When setting up zapier it says “I am giving Zapier authorization to delete my entire google drive or sheets” This can’t be correct. Is it only asking so when I want it to delete something?
Appreciate any help on setting up zapier.

Good question.
Zaps will only do the triggers/actions that you configure.
For GDrive the are no destructive Zap actions available.
To delete files/folders, you would need to use the Zap action: GDrive - API Request
For GSheets, the only destructive Zap action is: GSheets - Delete Spreadsheet Row
