Can we set up a calendly - zapier - convertkit connection so that anyone who books a call with me, his email is automatically taken to convertkit and we can send a reminder email an hour before the call?

You can certainly integrate Calendly and Kit(formerly convertkit) on the Zapier platform.
Based on your use case, you can use the Invitee Created trigger with Calendly and an action step that will add the subscriber to Form/Sequence in Kit.

After that, you can add an email step so a reminder email is sent.
