I am currently looking to automate employee scheduling on the WhenIWork app based on the booking emails that we receive. Is this possible or is there some other automation tool available?

FYI: Most Zap app integrations are maintained by the app developer, rather than Zapier, so the app developer would need to update the Zap app to make more triggers/actions/searches available.
If the app has webhooks and/or APIs available, then you may be able to extend the functionality of the app using the Webhooks app: https://zapier.com/apps/webhook/integrations#triggers-and-actions
