I clicked around the site and googled the issue, but I can’t seem to find a useful way to retrieve my own Zapier data. All I want to do is answer some basic questions: Which of my Zaps are active? How are they triggered? Last time they ran?

Zapier does not have an API yet for managing Zaps.
Check out the Zapier Manager app which may have some useful triggers/actions/searches for helping you to log and manage your Zaps: https://zapier.com/apps/zapier-manager/integrations#triggers-and-actions
