I am trying to get a zap whereby every time a new customer is created, a form is passed to Kajabi.
I am able to connect to stripe via API key with no issue, but every time I test the trigger, I get another error:
I then get an email telling me to reconnect my stripe account, which I do, and then the whole problem starts all over again.

Are you trying to use LIVE mode or TEST mode for Stripe?
Post screenshots showing how your Zap step is configured in the CONFIGURE tab.

If not, wanted to share a link to this related Community thread regarding the same “Error while retrieving: Invalid auth connection. Please reconnect your Stripe account to Zapier.” error:
In that particular case it looks like they had test mode enabled still and that’s why it was erroring.
If you’re wanting to use test mode rather than live though, I’d recommend checking out the How to use test mode data with Stripe on Zapier guide that Troy shared, to make sure all the necessary setup is in place.
