i try to update the shopify quantity but always get the same error. The product with this SKU and variable is available. If i choose the shopify product directly it works but the the quantity will be removed always from the same product. We get the product infos from a mail we scrape with mailparser.io

Good question.
These fields likely expect different internal ID as the values.
You can check this by removing the mapped variables and looking at the dropdown list of options.
The smaller gray font value for each friendly value is what the field expects as a value.
