When an employee has and manager/supervisor change in Personio, I want to trigger a change in Azure to change their Manager.
But the manager field is missing from the options.
Is there a way round this or a way to add the manager field.

They do have API request action so you try looking into their API documentation if it’s possible to change the manager through that. Here is a helpful article about API request in Zapier-https://help.zapier.com/hc/en-us/articles/12899607716493-Create-an-API-Request-action. Hope it helps!

I see we’ve got an existing feature request for this so I’ve added your vote to that. While I can’t guarantee if or when this will be added, we’ll be sure to notify you via email when/if the Manager (Reports To) field is added to the Update User action.
