I’m running into an issue where my Zap turns off by itself. It doesn’t show any errors or stoppages in the immediate history, so I’m not quite sure what is going on.

Do you have a Calendly paid plan?

In order to use Calendly with Zapier you must have a premium/paid Calendly account, as noted here: https://help.calendly.com/hc/en-us/articles/235289507-Zapier
