I connected Zappier with Saleforce. I create a Update Tigger ,
but How to Tigger Action only E-mail address got updated or only a specific field update ?

The Salesforce Zapier apps looks for update on all fields, you can try with webhooks as mentioned here to get around this and only trigger on email changes:
