I want to pull email addresses from two seperate fields in podio into the “Email to” field on Xero. I have tried seperating the emails with , and ; sofar, but now luck. Any suggestions - or is this not possible?

You should try to add the 2nd email id in XERO Contact using below action and than map this id while creating invoices. Let me know if this works or not
Thanks for this - how would I navigate to this view you’ve screenshotted through the Zap Dashboard. Bear in mind, the zap I want to ammend already exists, so it would need to be navigated to through editing a zap, I assume?

Add an action in your Zap that creates or updates a XERO Customer.
Now map the above action customer id in your Zap action - Create Invoice
