Hope you don’t mind but I’ve moved your post out into a new topic so we can address it separately—as it looks like the issue you’re running into is a bit different from the original topic, which was about separating values from a Webhooks trigger’s Raw Body field.

If there’s only ever going to be one set of booking fields from the email then you might be better of changing that Formatter step from a Formatter (Utilities > Text to Line-item) action to be a Formatter (Text > Split Text) action instead. This would output the booking information as individual fields instead of line items.

With that action you’d select the output from the relevant ChatGPT action for the Input field, set the Separator to be , and select All (as Separate Fields) to be the Segment Index:

That should then allow you to select the each field separately:
