My zap runs great for when I put my info in google sheets it creates a perfect event in google calendar. However, if I go back an make an edit/change to any info in the google sheet, it will create a NEW event in google calendar instead of just updating it. How do I achieve this goal?

Welcome to the Community! I'm sorry you’re having trouble with your Zap.
If you need to make any of those changes to your Google Sheet, turn your Zap off while you work on the spreadsheet, and then turn it back on again.

Good question.
You should save the GCal Event ID in a column on the GSheet to reference for updates.
Basically, 1 Zap if there is no GCal Event ID to create a new event, and 1 Zap if there is a GCal Event ID to update the event.
If you have a Pro+ plan, then you can use Zaps.
