Zapier instists that “amount” have a value equal to the values of unit price * quantity. How can I do math on these two fields? Normally this field is autogenerated in Quickbooks.

Before you perform the action you show above, you can add a “Formatter by Zapier” action. Then within this, make your mathematical calculation using Numbers → Perform Math Operation.
Then after this calculation, you can use the output of this value in your next step again. Let me know if this helps you!
