I’ve been able to easily add a zap to create a mailchim contact everytime my Google Sheet is updated, but is there a way to delete (or unsubscribe) a contact if I remove them from the Sheet as well?

You’d have to use a Webhook action step to use the Mailchimp API in order to delete an Audience Member: https://mailchimp.com/developer/api/marketing/list-members/delete-list-member/
