Is there a way I can have an action to create a Slack channel when a new row entry is added to a Google Sheet but also add people to the channel at the same time?

“At the same time” might not be possible. The “Invite User to Channel” action explicitly calls out “You must be a member of the channel to invite someone to it.” So we’d likely need to build in an interstitial step whereupon you are added to the channel first. (It might be a separate zap.)
