Currently, I have a zap set up where if I put a task into Google Tasks it zaps it over to my Things 3 inbox. The only issue I have with this is that now I have the task in two places. Is there a way that I can have it check off the task in Google Tasks after it sends it over to Things?

What you could do is to use the Google Task Action Update Task - which I think lets you mark the task as completed.
So your Zap would look like this:
Trigger: Google Tasks New Task
Action: Things - Create To Do
Action: Google Tasks Update Task (use the ID of the task from the trigger information to tell Google which task to update)
