I currently have a zap that successfully triggers on a new HubSpot form submission --- BUT --- once the form is submitted, Hubspot needs a couple minutes to do its thing before the form is ready for Zapier consumption. Is there a way to use a Delay step to cause the zap to pause between the initial discovery of a new submission and when it reads the data? Or does the read happen concurrent with trigger?

The data output from a Zap step is a snapshot of data at that point in time.
If you add a Delay step and want to get the current data for a record, then you would need to add a Find Record step after the Delay, and map the data output from that step.
