If we are using a Search Record, Update Record and Insert Record task on Salesforce in a single zap. So will that consume 3 API limit from salesforce or 1 limit ?

Each Zap step would be at least 1 API request.
Some Zap steps perform multiple API requests, think of these a sub API requests. (e.g. find else create record)
In the Zap Runs history details, you can see each app API request in the LOGS tab.

From the Salesforce side, that’d be considered 3 calls to the API.
For Zapier, that’d be considered 3 tasks.
