Would it be possible to make a Zap that pulls 7 or 8 metrics from a Pinterest Ads campaign to the same Google Sheet cells, each new day? So the trigger would be the time reaching 8am EST (for example) each day. Is this doable?

You’d have to explore leveraging the Pinterest Ads API: https://developers.pinterest.com/docs/redoc/adsreporting/
This involves more advanced concepts, but APIs can be leveraged thru the Webhooks app: https://zapier.com/apps/webhook/integrations#triggers-and-actions
