Im getting data from Smartsheet to Xero Bill. In my Xero Bill I have column Cost Center and Cost Detail. I cant find these fields when filling in the Action of creating a bill in Zapier. Is there a way to include this columns?

You want to put them in the “Tracking” fields.
Go here - https://go.xero.com/Setup/Tracking.aspx - and find the name of the cost centre(s) you created.
They go in the left column, the value you want to send on the right.
