I'm trying to set up Zaps from ServiceTitan to pass customer email and phone number info to other platforms. I'm not able to capture any fields with customer data like name, address, email, phone number from our ServiceTitan customer records into Zapier. Is there a restriction that prevents me from using PII from ServiceTitan in zaps, or is there a workaround solution for this?

For example - I’m not sure how to complete the “Send new ServiceTitan appointments as offline conversions in Google Ads” zap that should be possible, per this: https://zapier.com/apps/google-ads/integrations/servicetitan/1617268/send-new-servicetitan-appointments-as-offline-conversions-in-google-ads. I can’t complete setting up the zap without any fields containing customer data available from ServiceTitan in zapier.

I did some checking on this end and it doesn’t look like the New Appointments trigger for ServiceTitan gives any customer details other than their ID. So I think you’d need to add a Search Customer Contacts action before of the Send Offline Conversion (Google Ads) action to first find the customer (using their ID):

Then in the Google Ads action, map the customer details from the fields output by the Search Customer Contacts search action.

Can you give that a try and let us know whether that search action is able to access all the name, address, email, phone number details for the contact?
