I need a feature to track when the email is read (not sent), and I understand that Gmail’s read receipt feature is only available for paid business or education versions. How can best use Zapier to do this?

There is not a way to create a read receipt for Gmail using Zapier, sorry about that. A third-party add-on should be able to help you though!
Additionally, if you are looking to receive confirmation that someone has received documents, you may want to check out some of the document apps that connect to Zapier that allow you send documents and receive receipts/signatures, etc. You can find those here: https://zapier.com/apps/categories/documents.
