Report email volume and responsiveness in Outlook, on an Excel sheet

I want to track our email volume and responsiveness.

I want to measure: how many emails we get by date, what type, lead source and response time i excel.  I would like to be able to drop and drag fields from outlook into an excel field.  Can someone help guide me here?  Thanks!
