I can see that you've been in touch with our Support team about this. It seems that your concern has been identified as a feature request, and one of our Support specialists has already added you to the list for this request. Here's what they said in their response to the ticket:
At the moment, renaming a file is not yet possible in Google Drive's Zapier integration. Looking at our records, I can see we have an open feature request for the functionality you’re after.
While we do not have an ETA on when will this get implemented, I am going to let my team know that you were interested in this, too, and in the future should we be able to add this to our app, we will be happy to send you an email.

Just dropping by with a quick update to share that we’ve added a Update File Name action to the Google Drive app on Zapier!
In case you missed the email notification that went out here’s the key details from it that you need to be aware of:
A couple notes on this new feature - it only works on one file at a time, so if you need to rename multiple files, please use Looping by Zapier to run it multiple times.
Second, you can't change the file extension of a file in Google Drive after it is created (this is a limitation of the API), so if you need to do that, please use the Copy File action to make a new file with the extension you want.
