I am integrating Airtable with Mailjet to import Contact Properties. The Airtable actions are set up and tested and check out just fine. The problem is that in the Mailjet portion of my Zap, the Setup fields are all showing the data imported from Airtable, but then when I go to Test action in the Mailjet portion of the Zap, the fields are all empty. It makes no sense to me how the data appears in Setup, but in Test it is all missing.

Were you able to test this Zap setup successfully? If the Test & Review is not showing what you expect, it sometimes helps to turn the Zap on and trigger it live - that way you can make sure the Mailjet action is working how you need!
