It looks like the Shopify zap is only focused on merchants, not partners.

Yes, the Zapier Shopify integration is aimed at merchants using Shopify rather than Shopify Partners. There isn’t an action in the Shopify integration that would allow you to send information about people who sign up to your app to Google Sheets, but we might be able to find a way to make it happen :)
Do you get an email or other notification when someone signs up for your app? If the email has details of the person who has signed up for your app, you could use something like Email Parser by Zapier to pull out the relevant details and then send it to a Google Sheet. Alternatively, are you able to send a webhook from your app when someone signs up? If so, you could catch that hook with Zapier and use that to trigger a Zap. Would either of those work for you?
