I am trying to figure out how to create a zap to remove parts from inventory shield when a job is completed in House call pro

It looks like the Inventory Shield does not support removing parts of the inventory in Zapier at the moment. I’d suggest reaching out to our Support Team to create a feature request on your behalf.
