Any changes to your Zapier billing plan are done on a pro rata basis, so you'll only be charged for the days on the plan. Changes to the billing plan also will reset your billing cycle.
So, in your case, let’s assume you're on a Starter Plan for $20/month, and that you’re halfway through the first month. On May 21st you upgrade to a Professional Plan for $50/month.
1. You'll receive a $10 credit (for half a month of Starter Plan)
2. This credit will be applied to the upgrade, so you'll only pay $40 for the first month of the Professional Plan.
3. One month from the upgrade, you'll pay $50 for the 2nd month of the Professional Plan

Sorry, I should have been more clear! When you upgrade you start a new billing cycle, which starts on the day that you upgrade. So yes: your billing cycle will run from the 21st of the month.
