I have setmore appointments and my Brevo accounts linked to Zapier. 

I am tyring to setup a Zap that when an appointment is booked in Setmore that Zapier will send the Appointment data to Brevo so I can send out a “fancy email” to the client using a Brevo template but it only allows me to create a plain text or HTML option within the Zap itself. 

Is there a way to pass the info/data to Brevo so I can use their email templates?

From research I should be seeing the option to reference the Brevo Transaction ID within the Zap but its nowhere to be found.

NOTE: A Transactional Email is different from an Email Campaign in Brevo.

This usually involves passing the recipient's details and custom variables to a predefined template in Brevo via a “Send Transactional Email” action. You’ll need to ensure the correct Brevo template is selected and any dynamic fields in it are filled using data from Setmore. If the "transactional template" or "template ID" option isn’t showing, you may need to reconnect or update your Brevo integration in Zapier.

Have you confirmed your Brevo account has transactional email activated and templates published?
