How to create an alias-communications-solution

Hi there

I am looking to mask email addresses in Gmail, Outlook, etc. from both the recipient and the sender but still allow them to email one another and in bestcase to document the communication.

Is there any kind, any idea of a clever Zap-startegy (maybe something with googlesheets, ID-Matchings, etc.) or any usefull tools I should ad?
